Millionaire’s Rice Krispie Protein Bars

Ingredients:

For the base:

• 70g rice krispies

• 50g smooth peanut butter

• 45g date syrup (or maple)

• 1 scoop  Fit Pro Whey Protein Vanilla

For the caramel:

• 200g Medjool dates (or date paste)

• 30g date syrup (or honey)

• 40g smooth peanut butter

• 30ml hot water

• 1/4 tsp fine salt

For the topping:

• 90g milk chocolate

• 1/2 tsp coconut oil

• Flaky sea salt

Method:

1. Place the Medjool dates in a bowl and cover with boiling water. Leave to soak for 10 minutes, then drain. If using date paste, skip this step.

2. Melt the peanut butter and date syrup together in the microwave for approximately 20 seconds. Stir in the Vanilla Whey Protein, followed by the Rice Krispies, until everything is evenly combined.

3. Transfer the mixture into a lined loaf tin and press down firmly to create a compact, even base. Place in the freezer for 15 minutes.

4. Add the soaked dates, date syrup, peanut butter, hot water and salt to a food processor. Blend for approximately 3 minutes, scraping down the sides twice, until the caramel is completely smooth and creamy.

5. Spread the date caramel evenly over the chilled Rice Krispie base, smoothing the surface. Return to the freezer for 20 minutes.

6. Melt the milk chocolate together with the coconut oil until smooth. Pour over the caramel layer and spread evenly. Sprinkle with flaky sea salt while the chocolate is still melted.

7. Place in the freezer for another 20 minutes until firm.

8. Cut into 10 bars using a hot, dry knife for clean slices. To do this, dip the knife into boiling water and wipe it completely dry before cutting.

9. Store in the fridge for up to 2 weeks or in the freezer for up to 3 months. Allow the bars to sit at room temperature for approximately 10 minutes before enjoying for the perfect gooey caramel texture!
